Cilantro Lime Rice

I want a hedgehog. It’s official! I.Want.A.Hedgehog.

When you start blogging, you also start finding yourself spending a lot of time online. Editing photos, stalking other blogs, drooling over food pics, replying to comments, looking for inspiration, reading articles on baby pandas, etc.

This morning, I was scrolling down my Facebook news feed instead of writing this post, of course. Procrastination at its best, I know. But, then something happened. After only 15 seconds of arduous scrolling, there he was. Biddy, the hedgehog. What? Never heard of him before? Well, today is your lucky day then. Meet Biddy.

Isn’t he adorable?! I don’t exactly remember how this picture made it to my news feed, but I’m glad it did. It only took a couple of pictures for me to completely fall in love with this cute, little creature. Not only do the pictures highlight Biddy’s cuteness, but they also show how loved he must be by everyone around him. He seems like a happy little hedgehog to me. He has his own stylish travel bag, he goes on exciting adventures, he gets yummy snacks and he is beyond photogenic. Man, I wish I was Biddy!

Anyhow, time to get down to business.

I have a very simple recipe for you today: cilantro-lime rice. I’m pretty sure you’ve all seen this before at Mexican restaurants and know how exquisite it is already, so it doesn’t need much of an introduction. All I can say is that, you will never go back to eating plain white rice after you try this. Yup, that pretty much sums it up. Enjoy!

Cilantro-Lime Rice
Serves 4
Quick rice with an exotic Latin flare.

Ingredients
  1. 1 cup of rice, long grain
  2. 1 tablespoon of vegetable oil
  3. ¼ of a medium white onion
  4. 1 small clove of garlic
  5. ½ lime, rind and all
  6. 2 cups of hot water
  7. 2 tablespoons of cilantro, finely chopped
  8. Salt, to taste
Instructions
  1. In a blender, puree onion, garlic and lime together with ½ cup of the hot water. Strain.
  2. Heat a pan over medium heat. Add oil. Add rice. Cook for 5 minutes while stirring constantly.
  3. Add lime/onion puree and the rest of the hot water.
  4. Cover and let it simmer for 15-20 minutes or until all the liquid has evaporated.
  5. Add cilantro and fluff with a fork to evenly distribute the cilantro. Remove from heat.
  6. Serve hot. Enjoy!
Notes
  1. This rice will not taste sour, it simply has a nice hint of lime.
  2. Do not forget to cook rice over low heat. It'll help prevent the rice grain from being mushy on the outside and hard in the middle.

      Rice is one of my favourite starches too. Although I love pasta just as much. Hopefully, I will never have to choose between the two :)
